The ‘great’ wine is made up of the best grapes of Pinot from the domain meticulously sorted and fermented in open barrels and small vats. Priority is given to the delicacy, the elegance and the seduction, more than the strength.
100% Pinot Noir from the second sorting.
From our vineyards in Magrie and the upper valley of the Aude and composed of a selection of the best grapes meticulously sorted for individual cuvaisons.
Dominantly calcareous clay soil, organic and biodynamic. Compost contributed. Plowing, hand-picked of only the best grapes 2 to 3 weeks after an initial picking at the end of August for the sparkling wines.
Destemming without crushing for some, and whole grapes with stems for others. Fermented in oak barrels and small deoxidized vats sulfite-free. Little intervention: some light stirring and mixing to avoid too much extraction and to preserve finesse. Soft pressing and settling in vats, always without sulfite, and then put in old barrels of 500l. Malolactic fermentation stops naturally in November, then ageing with fine lees, without racking. A small amount of sulfite added at the end of ageing and before setting, to preserve the delicate fruitiness. Stored at the domain in August. Ageing in bottles in our cellars in Limoux.
Alcohol: 13.3%; Total acidity: 3.62; pH: 3.52; SO2 Free: 11mg/l; SO2 total: 49 mg/l.
Lovely typical fruit flavours for Pinot Noir (cherry). Spices, freshness and lightness. Lots of elegance and delicacy.
Serve at 16°, with pates, cold meat platters, poultry, white meat and roasts in sauce.
