'Blanc de Noirs style', Chardonnay, Pinots Noir and Meunier. Absolutely unique in the world of Crémants AOC! This Cuvée fermented and aged in barrels is for Jean-Louis Denois a real fulfillment following the premonition of Michel Bettane in 1994 in the RVF. This Cuvée based on Pinot Noir has been awarded with a 'Coup de Cœur'. The sun of Versailles on the label represents the leading Champagne region all-powerful and absolutist for over two centuries. This Champagne may be challenged and eclipsed by a stubborn ram! Some hundreds bottles available, rare and confidential! Unique Crémant that well overcomes great Champagnes.

Organically grown with no synthetic products. Hand-picked early-on in small cases.


Gentle pressing of whole-grapes, selection of best juices, fermented in barrels.


Ageing in oak barrels for 10 years or more to not extract tannins or the taste of wood. Bottled at the end of spring and ageing with lees in bottles on racks for more than 4 years. Titled and shaken in the traditional way, with a small dose of 5 g/l of Extra Brut.


Alcohol: 12%; Total acidity: 4.5 g/l; pH: 3,05; Residual sugar: 5 g/l.

Tasting note

Rich bubbles, brilliant golden color, finesse, greatness. Ripe in the nose (apple, pear, mint, tarragon, light smoky, bergamot. Great freshness in the mouth, gourmet and powerful, fruitiness, long finish with appel notes.


Comparative tasting, aperitif with prunes in bacon, stoved 'foie gras' with apples, fine fish, Parmesan cheese or Tomme ewe, gratin of white fruits.
