Vineyards of Saint Pierre and Borde-Longue at Roquetaillade. Organically grown. Hand-picked in small cases.
A portion of ‘Blanc de Noirs’ is obtained by pressing. Another portion is blended by bleeding after a 2 days maceration of unstemmed grapes to obtain the colour and an intense fruit flavour. Second fermentation and ageing in bottles (lying lengthwise in piles on racks, with lees). Tilted and shaken traditionally before corked. Dosage of ‘Brut’ moderated at 7 g/l.
Delicate salmon pink colour with fine long-lasting mousse, typical Pinot Noir strawberry and raspberry aromas. Creamy and refreshing. Not too acidic nor too sweet. Sweet finish without bitter aftertaste.
From aperitif to dessert; with strawberry fruit salad or fruit tart; afternoon or late evening.
