Style

A rare blend of "Blancs de Noirs" outside the Champagne region (white juice from 70% black grapes), accounting for its 'winey' style with lingering fruit, and Chardonnay, bringing elegance, freshness and finesse.

Where

From our own vineyards in the Fenouillèdes, upper Agly Valley, Roquetaillade and Magrie in the upper Valley of the Aude.

Vineyard

Organically grown. Hand-picked and transported in small cases.

Winemaking

Pressing of whole-grapes and selection of juices.

Ageing

Second fermentation in bottles and ageing with lees for 3 years on racks (traditional method). Tilted and shaken before final corking. Received a small dose of around 7 g of sugar per litre.

Analysis

Alcohol: 12 %; Total Acidity: 4.50 g/l; pH: 3.10.

Tasting note

Refreshing and fruity, nice red berry (currants) finish. Intensity, length and winey-ness of the ‘Blanc de Noirs’.

Serving

Aperitif, beginning of meal, pasta, cold meats, fish and seafood, sushi and salads.
