A lovely Southern and mineral wine
Dry white without wood (crispy), fine and fruity, delicate, very fresh and light on the alcohol.
90% Chardonnay and 10% Muscat, hand-picked
From our own vineyard in Saint Paul de Fenouillet (upper Agly Valley), near the Boulzane river, tributary of the Agly. Draining soils of glacial alluvium (former pebbles).
Organically grown, no weed killer, chemical pesticides nor synthetic products. Plowing of the soil. Hand-picked.
Whole grapes are transported in 15 kg cases and pressed without crushing. Fermentation without sulfite in old barrels for a complexity without wood.
Racking of barrels with lees and ageing in vats with fine lees for more body. Corked with Diam security corks.
Alcohol: 12%; Total Acidity: 3.78g/l; Ph : 3.25; Residual sugar: 23.50g/l; Total SO2: 35 mg/l.
Pale delicate gold colour. Fresh nose, floral, buttery, white peach. Slightly aromatic Subtle palate, very fine, elegant and light (12% alc).
A lovely refreshing white for the summer, very elegant due to hand-picking (which has become rare on this type of wine, including Chablis). Serve at 10°, aperitif, seafood, oysters, tapas, terrine, vegetables, raw fish or fresh cheese.
