Burgundy bottles with Diam safety corks.
Organically grown, 3 500 vines/hectare carefully trellised. Tilled grey clay soils. Hand-picked in early October at optimum fruit ripeness.
Careful destemming, sorted twice by machine, no crushing. Gentle whole-berry fermentation in vats.
10 months in barrels to round out the tannins. Light filtration. Bottled late summer and stored in bottle in our Limoux cellar.

Deep red colour, blackberry nose. Supple rounded palate, spicy with touches of cloves and black olive, gets more powerful on its long peppery finish.
Drink this serious red lightly chilled in summer with leg of spring lamb, beef in red wine, roast veal with mushrooms, lamb chops and stuffed eggplant.
