PINOT NOIR 'Village'

A fresh Pinot made with precision by the pioneer of this variety in Languedoc since 1988.

100 % Pinot Noir from the second picking.

Where

The ‘Village’ wine is a mix of Pinots Noirs from several vineyards in upper Magrie and Roquetaillade, upper Valley of the Aude.

Vineyard

Calcareous clay soil, organically grown (compost). Careful tilling, hand-picking of the best grapes, kept for 2 or 3 weeks after the first picking for the sparkling wines.

Winemaking

Careful destemming without crushing and whole-grapes loaded in small deoxygenated vats without sulfite. Pre maceration in the cold and light stirring. Soft pressing, settling in vats, without sulfite and put in old barrels of only 500l.

Ageing

The malolactic fermentation stops naturally and ageing proceeds on fine lees without racking. A small amount of sulfite is added only before setting to guarantee the transport and ageing process. Complementary ageing in bottles in the cellar in Limoux.

Analysis

Alcohol: 13%; Total acidity: 3.75 gr/l; pH: 3.42; SO2 total: < 25 mg/l.

Tasting note

Soft and polished thanks to the absence of sulfite, light, elegant, gourmand, cherry, an attractive Southern Pinot.

Serving

Serve fresh with pates, cold meat platter, poultry, white and red meats.
