Flagship of the Denois range!


This visionary modern style wine is made from noble Bordeaux grapes that are perfectly at home in our cool Atlantic influenced climate in the Pyrenees foothills; unique AOP here in the Languedoc for these grape varieties.


Merlot (>50%), Cabernet Franc and Sauvignon, Malbec.


La Bourdette in Roquetaillade, upper Aude Valley.


High trellising for large leaf canopy. Entirely organically grown since 2009. Compost is used. Hand-picked when fully ripe into small crates to avoid squashing the grapes.


Destemming without crushing then sorted twice by vibration and air-blowing, the vat is filled by gravity (conveyor belt) for whole-berry fermentatation allowing gentler extraction and avoiding too much tannin.


18 months in cask and vat for some of the merlot to retain fruit and avoid too much oak.

Tasting note

In its youth, robe with purple hints. Complex in the nose, blackcurrant, blackberry, raspberry with a peppery background, slightly spicy, grilled woody notes. Supple, generous and gourmet Limoux wine. Nice balance, freshness, wood and red fruits. Charm to share!


With red meat: rib of beef, duck fillet with porcini, small game... black pudding with mash, roast pork in prunes, matured semi-soft cheeses.
