A reference in Merlot from South of France
for more than 20 years!
A classic of the domain, from an old vineyard of Merlot, raised in barrels and produced only in good years. ‘An iron fist in a velvet glove’ (Pierre Casamayor 2002).

Vineyard La Bourdette at the foot of the Roquetaillade castle. The Atlantic varieties work well in our cool vineyards, in the upper valley of the Aude, which benefits from lovely end-of-season sunshine and freshness that allows the grapes to ripen well each year.
Organically grown since 2009: no herbicide or synthetic products used, plowing, biodynamic compost. Hand-picked late in the season when completely ripe and acidity is at its optimum, transported in cases of 15 kg to avoid squashing.
Destemming then whole-grapes are sent to a vat filled with neutral gas, with no sulfite added. Slow extraction and long vat-time with little intervention, only for light mixing. Light pressing.
Ageing of 10 months in ‘bordelaise’ barrels of one and two wines, then an additional year in bottles in our cellar in Limoux.
Alcohol: 13.5%; Total acidity: 3.25 gr/l; pH: 3,65.
Complex and rich, soft in mouth. Freshness without too much tannin. Long-lasting potential.
Serve at 18° max. With rare red meat: rib of beef, duck fillet, game or mushrooms.
