Wine matured in amphora, totally free from a woody make-up; the amphora is a real alternative to barrel ageing revealing all the fruit purity.


100% Cabernet Sauvignon 2014.
For vintage 2015, blend of Merlot and Grenache.


Vineyard at La Bourdette, across from the Roquetaillade castle, Upper Valley of the Aude.


Destemming without crushing and then sorted. The whole grapes are sent to a vat filled by gravity for a whole-berry fermentation allowing gentler extraction and avoiding too much tannins.


In 170 l fired-clay amphoras, hand-crafted and turned by hand, dried and baked in the Aude region, and without any coating for a better porosity. This way of maturing wine polymerises the tannins: the wine is soften without any taste and odor in comparison to wood.
The wine is bottled after 9 months aged in amphora, without racking.


Alcohol : 13,5%; SO² : < 25 mg/l.

Tasting note

Atypical Cabernet Sauvignon, far away from heavily wooded Cabernets we are used to drink: purity of flavours, softness in mouth, softened tannins (no excess), roundness despite the initial power of this Cabernet Sauvignon. Ripe grape, bewitching nose of sweet spices, Cardamom, Sichuan pepper, roasted red pepper and Crème de Cassis. In the mouth, very seductive wine with well blended tannins in a consistent structure. Very tasty, flattering wine, without heaviness.


To be decanted at least one hour before serving at a temperature of 15°. Serve with rare red meat: rib of beef, duck fillet, game or mushrooms.
