Grapes picked and sorted by hand before harvesting the white wine Saine Marie, and transported in small cases.
Fermented in oak barrels, maturation on fine lees for 10 months; Malolactic fermentation is then blocked guaranteeing more freshness.
Alcohol : 12%.
Very fine bubbles. Bright golden colour, fruity nose, rare and complex candied aromas (cedrat, mandarin, lemon), spicy notes (clove), a touch of vanilla and herbal tea. Round, fresh and elegant in the mouth. The finish is long with citrus fruits and a mineral touch. Great acid and tight structure.
Saint-Jacques with citrus fruits, chicken tagine with candied lemon, Reblochon or St Félicien (cow's milk cheeses).
