Our vineyards of Fenouilledes in the upper valley of the Agly, organically grown, hand-picked in small cases of 15 kg, no buckets, baskets nor trolley to avoid damage and to respect the finesse of the fruit.
Vat loaded by gravity (conveyor belt), maceration overnight. Pressing. Fermentation in vat at low temperatures and stopped by the cold at about 11° alcohol and 20 g/l of natural sugar of the grapes for the second fermentation. A natural second fermentation (no sugar added). Dose of 8 g/l. White bottles.
Alc.: 12°; AT: 4g/l; pH: 3.30; Sugar: 8g/l; SO2: 20/90.
Lovely strawberry, raspberry and grenadine fruitiness. A lovely balance, precisely studied to please everyone, not too much sugar, nor too lively. Ending fresh, supple, smooth, delicate and without tannins.
For aperitif, fruit dessert, fruit salad, fruit tart, clafoutis. To serve on ice.
