Very rare and unique sparkling made exclusively from red grapes (Blancs de Noirs)
100 % Syrah, first free run juices to space out the grapes.
From our own vineyards in the Fenouillèdes, upper Agly Valley: Caudiès and St Paul de Fenouillet.
Organically grown. Manual early seasn picking to select incompletely ripe syrah clusters.
Hand-picked and transported in small boxes, the grapes are pressed whole then we select the first-run juice. Second fermentation in bottles and ageing with lees (Traditional Method). Gently tilted and shaken to remove sediment then corked.
Alcohol: 12 %; Total Acidity: 5,5 g./l; pH: 3,05. Around 6 g of sugar per litre
Aperitif, beginning of meal, salmon and smoked fish, sushis... Beautiful freshness and nice fruitiness (little red berries, currants).
